Purple Sweet Potato Soup

purple sweet potato soup


  • 1/2 medium sweet potato
  • 1/3 cup chopped fennel
  • 1 1/2 cup water
  • 1/3 greek yogurt
  • pinch of sea salt
  • mint leaves to garnish



  1. Cube the sweet potato and steam until tender
  2. In a food processor blend the sweet potato, fennel and water until smooth
  3. Transfer to a pot and cook on medium heat until the soup begins to thicken
  4. Add the greek yogurt and stir until well blended
  5. Remove from the heat and serve with a  garnish of mint and sea salt
