My ideal breakfast includes a large stack of pancakes. Actually I could eat pancakes just about any time of the daily really. However, pancakes could easily take me off track with the flour and the sugar so I often experiment with healthier recipes and try my hardest not to smother it in honey. 😉
- 1 cup – Plantain Flour
- 1 cup – Protein Powder
- 2 Eggs
- 100ml Water
- Mix the protein powder with the water until all the powder has been thoroughly blended. I find it easy to do this in a shaker then transfer to a bowl.
- Mix the eggs into the protein mixture then gradually add the plantain flour until the mixture is thick but smooth.
- Melt the coconut oil in a frying pan and drop the pancake mixture in 1/4 cup amounts for medium sized pancakes.
In effort to avoid too much sugar, just top with fruit and enjoy.
