Mushroom Quinoa

Admittedly mushroom quinoa brings out the glutton in me. I love it! Much like rice, on its own quinoa can be a bit bleh so I often try combos it spice it up. This is most definitely my favourite recipe. It’s a very quick and super easy recipe for this nutritious superfood. Hope you enjoy.

Ingredients:

  • 1 cup quinoa
  • 1 cup chopped mushrooms
  • 1/4 cup spring onions
  • pinch sea salt (I used a rosemary flavoured sea salt)
  • 1 cup vegetable broth or water
  • 1 tbsp coconut oil

Method:

  1. Heat a pan and, once hot, melt the coconut oil
  2. Add the spring onions and saute for approximately 30 sec, until it becomes fragrant
  3. Add mushrooms and saute until the mushrooms are slightly brown
  4. Add quinoa and broth or water and mix until all ingredients are evenly incorporated
  5. Cover and allow to cook for approximately 10 – 15 minutes, until the quinoa has expanded and is translucent
  6. Uncover, fluff the quinoa with a fork and enjoy.
