Easy Parsnip and Ginger Soup

This is a very simple, but delicious recipe for parsnip soup. The ginger gives it a little kick that is nicely balanced by the hint of rosemary and paprika. I love parsnips because they have such a long shelf life and not at all costly. Hope you enjoy this!

  • 4 large parsnips
  • 1 clove garlic
  • 1 inch piece of ginger, peeled & chopped
  • 4 cups vegetable stock
  • 1/2 sprig rosemary
  • Paprika
  • Coriander

Method

  1. Peel & chop the parsnips
  2. Place all ingredients into a pot and bring to boil. Reduce heat and cook until parsnips are tender
  3. Place in a food processor or blender and blitz until smooth
  4. Garnish with paprika and coriander

 

Additional Info

Many people first saute the onions in oil before boiling. If you’d like to I’d suggest coconut oil 🙂
