For about 3 days I was craving curry and then I had the idea for this butternut squash curry. I finally satisfied my cravings with this easy recipe. I absolutely love curries with a coconut base so i almost always throw it in 😉 Cardamom is one of my go-to spices. I actually discovered the spice in Sweden when it was sprinkled on my coffee; from there the love affair began LOL Hope everyone finds this to be an easy recipe.
1 tablespoon Coconut Oil
1 medium Onion (chopped)
1 tablespoon Curry Powder
4 Cardamom cloves
2/3 dashes Ground Black Pepper
2 sprigs Coriander (chopped)
1/2 medium Butternut Squash
1/2 cup of soaked chicked peas
10 medium Okra
250 ml Coconut Milk
Heat the oil in a large pot over a medium heat then add the onions and cook until softened.
Add the curry powder and spices then cook for approximately 1 minute more
Add the butternut squash and mix well to fully coat in the curry oil.
Add water and cooconut milk, peas and okra then cover.
Cook until the liquid is thick and has reduced by half approximately
